A story that
starts with an orange

Lab is for laboratory; say Lab and over together and you get leftover; and the middle is a zero, not an O — zero food left, zero things left. In our logo that 0 is also an orange, so our name is itself a piece of food waste.

How it started

At the end of 2020, two young people in their twenties who had worked in community services met in Tuen Mun. They wanted to do something real with what little they had — a month later, Lab0ver was born.

Timmy cared about the community and wanted to support local farming: beyond selling veg, how could neighbourhoods and farms be better connected? The answer was food waste — the city has it, the farms need it.

We started on Tseng Choi Street, collecting neighbours’ fruit peel at street booths, fermenting it with Bokashi and taking it to farms in Kam Tin and Tin Shui Wai. From peel and eggshells to regulars crossing districts to drop off their scraps; from street booths to schools, universities and the community economy.

We’ve always been self-funded, without a steady income, and we learn as we go. But every time a neighbour tells us “I’ve started saving my peels”, it feels worth carrying on.

Belief

Be friends with food waste

We want to take the demon out of food waste: it’s natural, not dirty. It’s simply what’s left in the kitchen — food that hasn’t found its next home yet.

Community comes first in everything we do. Neighbours, shops, farmers and cleaners are all part of this story.

First-hand experience

We don’t tell people to collect food waste; we show them what it can do — and the best way is to try it yourself.

Five years

  1. 2021

    We start in Tuen Mun: street booths, Bokashi fermentation and community food waste bins with local offices. In summer we run booths in North Point with the Hong Kong Arts Centre.

  2. 2022

    Pay-as-you-go food waste bins arrive in zero-waste shops; coffee grounds collection with Blue Bottle Coffee begins; 20 market days at The Mills; our first university service-learning cohort.

  3. 2023

    Our first “Day Day Waste-Wise” school carnival; a project in Tin Yan Estate, Tin Shui Wai; and in December, the Spirit of Sustainability Award.

  4. 2024

    Food Waste Researcher 2.0 launches in San Hui, linked to the San Hui community economy and Tuen Dollars; Ming Pao films our DIY food waste bin.

  5. 2025

    Coverage on Now News and ViuTV; a carnival for all of Secondary 3 at Wu Hon Wai Secondary School.

  6. 2026

    Our fifth year. Researcher days move to every other month, and we start building a Hong Kong pre-consumer food waste map.

Sister organisation: Day Day Waste-Wise

In 2022, Timmy and Prof. Daren co-founded Day Day Waste-Wise (DDWW), which brings experiential environmental education into schools and is a recognised charity under Section 88 of the Inland Revenue Ordinance. Lab0ver experiments in the community; DDWW brings what we learn into the classroom.
